Pizza Mini Calzone

How to prepare Pizza Mini Calzone

1. Make the base: Put the flour into a large bowl, then stir in the yeast and salt. Make a well, pour in 300 ml warm water and the olive oil and bring together with a wooden spoon until you have a soft, fairly wet dough. Turn onto a lightly floured surface and knead for 5 mins until smooth. To achieve the perfect consistency, when making the dough, keep some extra flour and water nearby to add if necessary. Cover with a tea towel and set aside. You can leave the dough to rise if you like, but it’s not essential for a thin crust.

2. Roll out the dough: if you’ve let the dough rise, give it a quick knead, then split into a ball. On a floured surface, roll out the dough into large rounds, about 20cm across, using a rolling pin. The dough needs to be very thin as it will rise in the oven. Lift the rounds onto two floured baking sheets.

3. Make the Marinara Sauce: Use our recipe for the best homemade marinara sauce.

4. Top and bake:

1. Heat the oven to 425°F (220°C).Place a baking sheet or pizza stone in the oven to preheat.

2. On a lightly floured surface, divide the pizza dough into equal portions, depending on how many canzones you want to make.

3. Roll out each portion of dough into a circle, about 1/4 inch thick.

4. Spread a couple of tablespoons of marinara sauce on one half of each dough circle, leaving a small border around the edge.

5. Sprinkle shredded mozzarella cheese over the sauce, then add the pepperoni or cooked Italian sausage if using.

6. Fold the other half of the dough over the filling to create a half-moon shape. Press the edges firmly to seal, and crimp the edges with a fork to ensure they're tightly sealed.

7. Brush the tops of the canzones with olive oil and sprinkle with grated Parmesan cheese.

8. Using a sharp knife, make a couple of small slits in the top of each calzone to allow steam to escape during baking.

9. Carefully transfer the canzones to the preheated baking sheet or pizza stone.

10. Bake for 15-20 minutes, or until the calzones are golden brown and crispy.

11. Remove from the oven and let cool for a few minutes before serving. Sprinkle chopped fresh basil or parsley over the top before serving, if desired.

12. Serve with extra marinara sauce for dipping, if desired....

Repeat step for remaining pizza dough.
